At BrewDog, we serve up our super popular burger and wings menu. Food quality, consistency and compliance whilst maintaining a busy kitchen is the key to this role.

You’ll be in charge of your realm; the kitchen will be your orchestra & you’ll be the conductor. Every single item that leaves the kitchen will be a musical note & you’ll take pride in it being executed perfectly and on time.

You’ll be part of an experienced management team alongside a crew of passionate & confident individuals, made up of team in the kitchen, on the floor & behind the bar.

About The Role

We’re looking for an experienced, hands-on Kitchen Manager to oversee daily kitchen operations in our small but busy burger-and-wings bar.
 
This role blends leadership, organization, and cooking skills to keep our kitchen running smoothly, our food quality consistent, and our team motivated
 

Key Responsibilities

1. Kitchen Operations & Food Quality

  • Oversee preparation, cooking, and plating of all menu items (burgers, wings, sides, sauces, etc.) to ensure consistency and quality.

  • Maintain portion control and presentation standards.

  • Monitor cooking times and ticket flow to ensure timely service.

  • Create and adjust prep lists for efficient daily operations.

2. Staff Management & Training

  • Lead, train, and schedule kitchen staff.

  • Assign daily duties and monitor performance.

  • Foster a positive, respectful kitchen environment.

  • Provide ongoing training on recipes, safety, and hygiene standards.

3. Inventory & Ordering

  • Track stock levels and manage ordering of food, beverages, and supplies.

  • Minimize waste by monitoring storage, rotation (FIFO), and usage.

  • Work with suppliers to maintain quality and cost efficiency.

4. Safety & Cleanliness

  • Enforce all food safety, hygiene, and sanitation standards (including temperature logs).

  • Oversee cleaning schedules for kitchen equipment, tools, and work areas.

  • Ensure compliance with health department regulations.

5. Cost Control & Reporting

  • Monitor food costs, waste, and labor hours to meet budget targets.

  • Keep accurate records of deliveries, invoices, and inventory.

  • Report maintenance needs or equipment issues promptly.
