At BrewDog Distilling Co. our mission starts and finishes with liquid quality.  Innovation and experimentation are two of our most vital founding values and are at the beating heart of absolutely every drop of liquid that we distil. 

We believe in craftsmanship & transparency,  It's taken us 5 years of dedication to create our vodkas, gins and rums but we're only just getting started.  Our next venture will take us into expanding our whisky operation where we will be upsizing our production to 2000casks per year.

About The Role

The Junior Distiller will assist in the production of spirits, working under the guidance of Distillers and the

Distilling Operations Leader. This role involves supporting the day-to-day operations of the distillery,

including fermentation, distillation, and packaging. The Junior Distiller will support all aspects of the

distillation process, gaining hands-on experience with the goal of developing the skills necessary to become

a full distiller. This is an entry-level role ideal for someone passionate about the spirits industry and eager to

learn the craft of distillation.

 
KEY RESULT AREA / PRINCIPAL DUTIES AND RESPONSIBILITIES:
 

· Assist with the distillation process, including fermentation, distillation, maturation under the

supervision of Distilling Team.

· Perform daily checks on fermentation tanks and distillation equipment, reporting any issues or

irregularities to the Distiller.

· Help with equipment setup, operation, and maintenance, ensuring that all equipment is clean and

ready for production.

· Support quality control by assisting with sampling, testing, and monitoring product consistency.

· Keep detailed logs of production activities, including batch reports, ingredient usage, and equipment

performance.

· Participate in the cleaning and sanitation of the production area and equipment to ensure a safe and

clean working environment.

· Learn and follow all safety procedures related to distillery operations, including proper handling of

chemicals and equipment.

· Assist in warehousing duties, including the storage, stock control, and monitoring of casks and

product inventory.

· Collaborate with the production team to support new product development and small-batch trials.

 
KEY RELATIONSHIPS - INTERNAL AND EXTERNAL:
 

· Distiller: Work closely with the distiller for hands-on training and daily guidance.

· Distilling Operations Leader: Report on progress and assist with larger production tasks.

· Packaging Team: Ensure clear communication is maintained with the availability of spirit to pack.

· Quality Control Team: Assist in product testing and ensuring consistency in flavour and quality.

· Maintenance Team: Coordinate with the team to ensure that any equipment issues are promptly

addressed.

 
 
 
 

 

About You

· Attend training courses and complete online training modules as required to meet the requirements of the role

· Undertake any other duties as requested which are reasonably deemed to be within the scope of the role or necessary for the smooth running of the business
· Apply the BrewDog charter and behaviours to every aspect of the role at all times

QUALIFICATIONS & SPECIFIC TRAINING:
 
Basic knowledge of distillation and fermentation processes, gained through education or hands-on experience. A degree in Distilling, Brewing, Chemistry or engineering is preferred, relative experience will be considered.
 
EXPERIENCE:
 
· Any hands-on experience with fermentation, brewing, or distillation processes, even at a homebrew or amateur level, is highly valued.
· Experience in a production or manufacturing environment, particularly with machinery or equipment operation, is a plus.
· Exposure to basic lab work, such as taking samples or conducting simple tests, would be beneficial.
 
KNOWLEDGE:
 
· Basic understanding of the distillation process, including the role of yeast, fermentation, and the importance of temperature and timing during the distillation.
· Basic knowledge of how distilling operational equipment functions.
· Awareness of safety protocols in a distillery setting, including proper handling of chemicals and equipment.
· Awareness of the aging and maturation process for spirits, including cask management.
 
SKILLS:
 
· Ability to follow detailed instructions and work as part of a team in a fast-paced environment.
· Strong organisational skills and attention to detail, particularly in record-keeping and quality control.
· Basic mechanical aptitude, with the ability to operate the distillation equipment once trained.
· Strong communicator, makes the team aware of progress, challenges and feels comfortable asking for help.

ADDITIONAL REQUIREMENTS:
